Above all, Coonawarra is renowned for its Cabernet Sauvignon, which thrives in these conditions to produce wines of exceptional clarity and structure. Typical expressions show concentrated blackcurrant and mulberry fruit, fine-grained tannins, refreshing acidity, and layers of mint, graphite, and subtle oak. 

While the region also produces notable Shiraz and selected white varieties, Cabernet remains its hallmark, resulting in wines with depth, longevity, and a profound sense of place.
